6 Slices Cucumber - slices cut on the bias, then cut in half
2 oz. Chinese Rice Noodles - precooked by boiling for two minutes
6 Shrimp - 16-20`s, marinated for 10 minutes.
Line dinner plate with green leaf lettuce and top in center with lettuce mixture. Make a ring around the plate with the noodles. In the center of the salad lay the tomato slice, Fan the cucumber slices at 3 o`clock and at 9 o`clock (Skin on top at 3 o`clock, skin down at 9 o`clock) Lay red pepper, mushrooms and pea pods over top of salad. Charbroil shrimp and ring shrimp around tomato. Served with a side of spicy peanut dressing. (for dressing, see recipe 125)
